Responsibilities
The Sushi Preparer will have diverse responsibilities including both specialized food preparation and general kitchen duties. You will be expected to carry and replace linen as needed, ensuring cleanliness throughout the establishment. This includes cleaning and sanitizing items such as dishwasher mats, carts, and waste disposal units to maintain high hygiene standards.
Dishwashing and sanitation will be an important part of your role. You will need to load buspans and trays, operate dishwashers to wash dishes, glassware, and flatware, and place dishes in the storage area. Additionally, you will be responsible for sanitizing and washing dishes and other items by hand when necessary, as well as scouring pots and pans to maintain their quality and appearance.
Food preparation and handling will be your primary focus. You will need to keep records of the quantities of food used, package take-out food efficiently, and portion and wrap foods appropriately. The role also includes preparing, heating, and finishing simple food items, stocking refrigerators and salad bars with fresh ingredients, and using both manual and electrical appliances to clean, peel, slice, and trim foodstuffs to perfection.
Kitchen maintenance is another critical aspect of this position. You will be responsible for cleaning and sanitizing the kitchen, including work surfaces, cupboards, storage areas, appliances, and equipment. This involves handling and storing cleaning products safely, receiving, unpacking, and storing supplies in refrigerators, freezers, cupboards, and other storage areas. You will also need to remove kitchen garbage and trash, sharpen kitchen knives regularly, and sweep, mop, wash, and polish floors to maintain a clean and safe working environment.
Required Experience
To be successful in this role, candidates should have experience in Japanese cuisine, particularly in sushi preparation techniques. Knowledge of fish and seafood handling is essential, as you will be working with these ingredients daily. Familiarity with kitchen equipment such as conventional ovens, deep fryers, food dispensers, and grills is also required.
The ideal candidate will have a keen eye for detail, excellent time management skills, and the ability to work efficiently in a fast-paced environment. You should be able to follow recipes accurately while also understanding the principles of Japanese cooking to maintain consistency in our dishes.
